With Thanksgiving just around the corner, I have been brainstorming some delicious and easy dishes that everybody will love and that are perfect to take to that Friendsgiving dinner or your upcoming pot luck so I came up with these garlic asiago roasted potatoes. I don't know if you agree with me, but my favorite part about the Thanksgiving dinner is not actually the turkey but all the sides that I can pile on my plate. Every year, I make mashed potatoes because they are a staple for a Thanksgiving dinner. Mashed potatoes are amazing don't get me wrong, but sometimes we end up having Friendsgiving, work lunches and other related events that by the time that we get to actual Thanksgiving we are just tired of the food. This year I decided to try a variation of a dish that could replace the mashed potatoes in an elevated way. This cheesy, creamy and mouthwatering recipe will save you so much time for making a quality homemade dish for your next event. With inflation and the price of groceries through the roof, it can get expensive when you host an entire dinner or even taking dishes to our social events. Another great thing about this dish is that you can make a 4-6 servings of this dish under $10.
So what ingredients do I use for these garlic asiago potatoes?
Ok, let's get to the recipe. Although this may sound like a complicated recipe that requires clearly garlic, cheese and other ingredients. You only will need 5 items including salt and pepper. Yes, you read correctly 5 ingredients and the easiest part is the cheesy dip.
Here is the trick. You will buy the famous, incredible Trader Joe's Garlic Asiago Cheese Dip. If you have had this before, you know once you start eating it, you cannot stop. If you have not had this before you need to try it asap even if it's not for this recipe. It is a 10/10 by far and for only $4.99. I had tried this at get together and once I looked for it in the store, it took me forever to find it because I thought it would be in the frozen area but after asking a friendly staff member he pointed me in the right direction in the produce area. I linked it for you above so you can have an idea of how it looks like. Check out below the rest of the ingredients.
Ingredients:
5 Medium Russet Potatoes: If you do not have russet potatoes, you can use Yukon normal yellow potatoes. To be honest I couldn't tell you the difference if I tried them both at the same time.
1 Trader Joe's Garlic Asiago Cheese Dip: This dip will be enough for 4-6 servings so get more than 1 if you have a larger party. I found this in the vegetable produce section.
Vegetable oil: Vegetable, canola oil will work best for frying. I will not put a measurement because it will depend of the size of baking dish that you will use. You will pour enough oil to cover 1/3 in height of the potatoes in the dish.
Salt and pepper to taste: The pepper is optional since the garlic asiago dip is already very flavorful.

Taking the dish to a party
If you are taking this dish to someone's house, my suggestion would be to take the potatoes cooked, and take the dip in the package to assemble at the party. To heat up the potatoes, preheat the oven at 400F and cover the dish with foil to heat them up for around 10-15 minutes. While the potatoes heat up in the oven, you can simply follow the microwaveable instructions and plate it. This way of setting it up will avoid the potatoes getting cold or soggy if sitting around for a few hours. To plate this, you can use an extended plate with an edge like I did or you can also use a wooden board and make it look super pretty. The only downside is that it might be harder to scrape the cheese off the board. I found that the best way for me to set up the potatoes was to spread the dip all over the plate including the sides and line all the potatoes so they could all be touching the dip. I garnished with a generous amount of salt, a bit of pepper and green onions.
