Delicious Chilaquiles Verdes Recipe: A Traditional Mexican Breakfast

Chilaquiles pronounced (chi-la-key-les) is a traditional Mexican breakfast that consists of fried tortilla chips with either shredded chicken or eggs served on green mild salsa. Although these are the most traditional ones, there are many different types you can eat. Chilaquiles rojos (red), in a Ranchero style sauce, Chile morita, with pork, beef and many more.
This is a dish very popular for a weekend breakfast or brunch and rumor says that it is the best way to cure a hangover.
There is a trick to make good chilaquiles verdes. You don't want them to be soggy when you serve them. The best advice I can give you is to have all ingredients prepped before putting anything to cook. All toppings chopped, cheese shredded, avocado sliced.
Portions
The best part about this dish is that apart from the salsa, all your ingredients will be measured according to how much you want. The average plate has about 3-4 regular size corn tortillas cut into triangles or chips, 1-2 eggs and at least 1 cup of salsa. This chilaquiles verdes recipe can be adapted to your own needs.
Ingredients for chilaquiles verdes recipe
For the salsa:
Tomatillos: green tomatoes with a loose leaf type of peel.
Serrano peppers: you can also use jalapeños.
Onion: white or red
Cilantro
1 garlic clove
Salt
Water: from the boiled tomatoes and peppers.
Vegetable oil: olive, canola, avocado will work.
For the chilaquiles:
Corn tortillas
Eggs: if you prefer you can also use shredded chicken.
Queso fresco: queso panela would be the equivalent in Mexico.
Mozzarella cheese: in Mexico it would be queso Oaxaca, Aguascalientes or chihuahua cheese used for chilaquiles but any white melting cheese will work.
Green salsa: warm
Avocado. Sliced or in cubes.
Onion: Raw white or red
Cilantro: optional to garnish.
Salt and pepper.
Things I use to cook the chilaquiles
You will need a blender to make the salsa. If you only have a hand blender it will work just make sure that all the vegetables are completely blended.
The other main appliance I use is an air fryer. I prefer to use an air fryer to fry the tortilla chips because in my opinion they come out crispier with less fat used than in a regular frying pan. If you don't have an air fryer don't worry because the traditional way is to fry the tortillas in a pan with oil.
